Ingredients :
FOR THE CHICKEN PARMESAN
2 tablespoons all-purpose flour
2 large eggs
1 cup panko bread crumbs
2 tablespoons grated Parmesan cheese
2 teaspoons Italian seasoning
4 thin-sliced chicken cutlets (4 ounces each)
2 tablespoons vegetable oil
½ cup marinara sauce
½ cup shredded part-skim mozzarella cheese
FOR THE BROCCOLI
4 cups broccoli florets
2 tablespoons olive oil, divided
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
2 teaspoons fresh lemon juice
2 tablespoons grated Parmesan cheese
Directions:
To prep the chicken Parmesan:
- Set up a breading station with 3 small shallow bowls. Place the flour in the first bowl. In the second bowl, beat the eggs. Combine the panko, Parmesan, and Italian seasoning in the third bowl.
- Bread the chicken cutlets in this order: First, dip them into the flour, coating both sides. Then, dip into the beaten egg. Finally, place in the panko mixture, coating both sides of the cutlets. Drizzle the oil over the cutlets. To prep the broccoli: In a large bowl, combine the broccoli, 1 tablespoon of olive oil, the salt, and black pepper. To cook the chicken and broccoli:
- Install a crisper plate in the Zone 1 basket. Place the chicken in the basket and insert the basket in the unit. Place the broccoli in the Zone 2 basket and insert the basket in the unit.
- Select Zone 1, select AIR FRY, set the temperature to 390°F, and set the time to 18 minutes.
- Select Zone 2, select ROAST, set the temperature to 390°F, and set the time to 15 minutes. Select SMART FINISH.
- Press START/PAUSE to begin cooking.
- When the Zone 1 timer reads 10 minutes, press START/PAUSE. Remove the basket and use silicone-tipped tongs to flip the chicken. Reinsert the basket and press START/PAUSE to resume cooking.
- When the Zone 1 timer reads 2 minutes, press START/PAUSE. Remove the basket and spoon 2 tablespoons of marinara sauce over each chicken cutlet. Sprinkle the mozzarella on top. Reinsert the basket and press START/PAUSE to resume cooking.
- When cooking is complete, the cheese will be melted and the chicken cooked through (an instant-read thermometer should read 165°F). Transfer the broccoli to a large bowl. Add the lemon juice and Parmesan and toss to coat. Serve the chicken and broccoli warm.
