Coconut Chicken Tenders with Broiled Utica Greens

Ingredients :

2 tablespoons all-purpose flour
2 large eggs
1 cup unsweetened shredded coconut
¾ cup panko bread crumbs
½ teaspoon kosher salt
1½ pounds chicken tenders
Nonstick cooking spray
12 ounces frozen chopped escarole or Swiss chard, thawed and drained
¼ cup diced prosciutto
2 tablespoons chopped pickled cherry peppers
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon kosher salt
¼ cup Italian-style bread crumbs
¼ cup grated Romano cheese
Nonstick cooking spray
To prep the chicken tenders:


  1. Set up a breading station with three small shallow bowls. Place the flour in the first bowl. In the second bowl, beat the eggs. Combine the coconut, bread crumbs, and salt in the third bowl.
  2. Bread the chicken tenders in this order: First, coat them in the flour. Then, dip into the beaten egg. Finally, coat them in the coconut breading, gently pressing the breading into the chicken to help it adhere. Mist both sides of each tender with cooking spray.
    To prep the Utica greens: In the Zone 2 basket, mix the greens, prosciutto, cherry peppers, garlic powder, onion powder, and salt. Scatter the bread crumbs and Romano cheese over the top. Spritz the greens with cooking spray.
    To cook the chicken and greens:
  3. Install a crisper plate in the Zone 1 basket. Place the chicken tenders in the basket in a single layer and insert the basket in the unit. Insert the Zone 2 basket in the unit.
  4. Select Zone 1, select AIR FRY, set the temperature to 390°F, and set the time to 25 minutes.
  5. Select Zone 2, select AIR BROIL, set the temperature to 450°F, and set the time to 10 minutes. Select SMART FINISH.
  6. Press START/PAUSE to begin cooking.
  7. When cooking is complete, the chicken will be crispy and cooked through (an instant-read thermometer should read 165°F) and the greens should be warmed through and toasted on top. Serve warm.
